Ho Ho Ho Green Giant Pasta

As I’ve mentioned before, I’ve been trying to steer my family toward a meatless meal every week…this is not so easy, considering that I live with a bunch of carnivores (myself included). You are not going to see Tofu on the menu any time soon. So, on Sunday I was in a dinner pinch and was not in the mood for much. But I grabbed a box of pasta and a can of artichoke hearts and wondered what I could whip up that would be yummy. 30 minutes later, this pasta dish was born!

 

Ho Ho Ho Green Giant Pasta

  • 1 box (14.5 oz) Ronzoni Smart Taste Penne Pasta
  • 1 cup chopped green onions
  • 1 or 2 cloves of chopped garlic
  • 1/4 cup butter or margarine or olive oil
  • 1/4 cup flour
  • 2 cups skim milk
  • 1/2 bag frozen whole leaf spinach
  • 1 can artichoke hearts
  • 1 can Cannelloni beans (white kidney beans)

Set a large pot of salted water to boil. (I add a dash of olive oil to keep from boiling over once I add pasta). Cook pasta according to package directions.

Melt butter or margarine over medium high heat and add onions and garlic, cooking until it smells yummy.

Add flour and blend. Slowly add milk, creating a white sauce.

Now, when the sauce begins to thicken, add the frozen spinach, stir... the sauce will turn the prettiest shade of green!

Drain pasta, toss with drained artichoke hearts and drained beans.

Toss entire mixture with sauce, top with grated Parmesan cheese.

Totally yummy, and so good for you too!

Now, my kids were a bit reluctant to try this…until they saw the spinach! they love spinach! They were not nuts about the artichoke hearts though, which is fine…I ate the extras!

    That looks yummy! We'll have to try it sometime–I might cheat and add some sausage for my carnivore…
